Position Overview
We are looking for a skilled, detail-oriented Sushi Chef with a strong foundation in traditional Japanese sushi preparation and the ability to thrive in a fast-paced, high-volume restaurant environment. The ideal candidate takes pride in craftsmanship, consistency, presentation, and maintaining the highest standards of food quality.
Responsibilities
- Prepare high-quality sushi, sashimi, nigiri, and specialty rolls with precision and consistency.
- Handle, inspect, and prepare fresh fish and seafood according to proper standards.
- Maintain excellent knife skills and demonstrate proper fish fabrication techniques.
- Ensure beautiful presentation and consistent portion control.
- Maintain a clean, organized, and sanitary sushi station.
- Follow all food safety, sanitation, and health department regulations.
- Work efficiently and collaboratively with the kitchen team during busy service periods.
- Assist with inventory management, product rotation, and minimizing food waste.
- Contribute to menu execution and uphold the restaurant’s culinary standards.
Qualifications
- Previous professional sushi chef experience required.
- Strong knowledge of sushi preparation, sashimi, nigiri, and Japanese culinary techniques.
- Excellent knife skills and attention to detail.
- Ability to work efficiently in a high-volume, fast-paced environment.
- Strong commitment to food quality, cleanliness, and consistency.
- Dependable, punctual, professional, and able to work as part of a team.
- Availability to work evenings, weekends, and holidays as needed.
