Job DescriptionPosition SummaryThe Sous Chef works closely with the Chef de Cuisine to create and execute outstanding food that shows the wines well. They are responsible for various kitchen duties including food and meal preparation, execution of service, and cleaning tasks as assigned.ResponsibilitiesProvide food preparation duties as assigned by Chef de CuisineAssist with delivery and/or pickup of food/event supplies as neededMaintain recipes and menus to be served to hospitality guests and at events as assigned by winery chefRegularly develop, test, and implement new recipes to pair with CWUS wines.Provide dishwashing and kitchen cleaning duties as assigned by Chef de CuisineInventory kitchen supplies on a monthly basisEnsures kitchen is maintained at a safety and health standard consistent with the standard of CWUSAssist with setting up and breaking down of meal service, tastings, and eventsAssist with stocking of wines at all venuesAssist with cleaning projects as assignedAssist other CBUS properties as requiredAssist in supervising temporary or on-call kitchen Help in the absence of the Chef de CuisineMinimum QualificationsMinimum 2 years’ experience in a professional kitchenDegree from an established Culinary Academy recommendedCurrent Food Handlers or ServSafe CertificateMust have culinary skillsMust know and understand meal preparation with regard to timing and logisticsSolid organizational and time management skillsMust make decisions with good judgment and maturityEffective written and verbal English skillsMust have knowledge of state and federal laws concerning safety, sanitation, and cross-contamination and must abide by these lawsMust be creative and motivated about food and wine pairingsPhysical Requirements/Work EnvironmentWork Environment:Works outdoors/indoorsWorks in warm/cold climatesWorks in high placesWorks on wet surfacesIs exposed to loud noise, fumes and/or toxic chemicalsWorks near moving, mechanical parts and lift truck trafficMust be able to move up to 55 lbsPrimary office environment may be tasting room/barrel roomMust be at least 21 years of age.
